Fearne Cotton: Death by chocolate cake
Welcome to my kitchen. In the past five years my life has changed a lot. At 29, I was a single girl who worked long days but loved going out to gigs most nights. It was most definitely a chaotic food routine. Now, I find myself a something wife and mum of two children and two stepchildren. For me, having a family means eating together and having fun cooking and baking. I still love going to gigs and I adore my job but keeping myself, my family and my friends fed and happy is of paramount importance.
When Fearne's not making us laugh on screen or keeping us company on the radio, the rest of her time is spent in the kitchen. As a mum to two young children, she's always trying to find new ways to get veg into their diet - and these beetroot cupcakes make getting your five a day easier and that bit more exciting, too. For the icing: g cream cheese, or dairy free alternative 2 tbsp set honey desiccated coconut or chocolate shavings, for sprinkling optional. Method: 1. Place the grated beetroot in a fine sieve over bowl and collect about 1- 2 tsp of the juice to colour the cream cheese. Pace the butter and sugar in a large bowl and cream together until light and fluffy. Beat in the egg, flour, bicarbonate of soda, baking powder and vanilla extract until combined.

These easy-to-bake chocolate cupcakes are made by celebrity mum Fearne Cotton and are the perfect treat for yourself and the family or to take to a charity bake sale. Radio One presenter and mum-of-two Fearne has teamed up with the homeless charity Shelter to make these delicious chocolate cupcakes for their Cake Time campaign. These chocolate cupcakes are deliciously moist with a vanilla chocolate buttercream topping - do we need to say more? We recommend topping these off with fresh seasonal fruit, particularly berries - we love raspberries and chocolate flakes and chocolate chips. Using an electric mixer, mix the butter, sugar, flour and cocoa powder in a bowl adding the beaten eggs slowly into the bowl as you are mixing.
